Ingredients
White Chocolate Cupcakes with Strawberry Frosting Ingredients
- 3/4 Cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon Salt
- 1/4 Cup Butter softened
- 1/2 Cup sugar
- 1 medium Egg at room temperature
- 1/2 teaspoon vanilla extract
- 1/4 Cup Whole milk at room temperature
- 1/3 Cup white chocolate melted
- 4 strawberries sliced in half
- 1/4 Cup Butter softened
- 3/4 Cup confectioners sugarr
- 1 tablespoon fresh strawberry puree
- 1 tablespoon basil chopped
Instructions
- Preheat oven to 350ºF. Line a regular muffin pan with 8 liners and set aside.
- Combine flour, baking powder, and salt in a bowl. Mix well and set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar on medium speed for 1 to 2 minutes.
- Add egg and vanilla; mix until well combined.
- Gradually add flour mixture. Pour in milk and melted white chocolate. Mix until just combined.
- Portion batter equally among muffin cups. Bake for 18 to 20 minutes. Transfer cupcakes to a wire rack and cool completely.
- While cupcakes are baking, make the frosting: Beat together butter and confectioners’ sugar in a bowl. Add strawberry purée and mix well. Fold in basil. Cover and chill until ready to use.
- Spread or pipe frosting on top of cooled cupcakes. Garnish with strawberry halves, basil leaves, and grated white chocolate.
